Two Recipes

Here are two recipes that I obtained from my Aunt Janet many years ago. They have been stuck in a drawer, but they are good enough that I have decided to post them here...if only so that I won't lose them again.

For this recipe we need:

    2 eggs

    3/4 cup of milk

    1/2 cup of bread crumbs

    1/4 cup of chopped onion

    2 tablespoons of parsley

    1 teaspoon of salt

    1/8 teaspoon of pepper

    1/2 teaspoon of sage

    1-1/2 pounds of ground beef

plus for the glaze we need:

    1/4 cup catsup

    2 tablespoons of brown sugar

    1 teaspoon of dry mustard

Combine the ingredients for the meatloaf and the glaze separately and mix thoroughly. Place the meatloaf in a loaf pan and bake at 350 degrees Fahrenheit for 1-1/4 hour. Spoon off the melted fat and brush the glaze on top of the meatloaf. Bake for another 10 minutes.

Ice-Box Cake

For this recipe we need:

    1/2 pound of butter

    2 cups of powdered sugar

    1/4 cup of water

    1/4 cup of granulated sugar

    2 squares of chocolate

    4 eggs, separated

    1 teaspoon of vanilla extract

Mix the granulated sugar, water, and chocolate and melt together in a double boiler. Add the egg yolks and cook the mixture until thick, stirring rapidly. Cool the product to a little above room temperature and mix in the butter and powdered sugar. Beat the egg whites to a froth and fold that into the cooled mixture. Line a cake pan or a bowl with lady fingers and pour the mixture into it. Top with whipped cream and refrigerate overnight.
